Chicken and Cabbage Stir-fry

What you'll need...
450g chicken breasts, cut into strips
2 teaspoons soy sauce
½ teaspoon ground black pepper
200g broccoli, stalks removed
200g red cabbage, shredded
2 tablespoons olive oil
1 red onion, chopped
3 garlic cloves, chopped
small piece root ginger, peeled & chopped
1 chilli, seeds removed and sliced
1 large carrot, grated
2 tablespoons rice wine vinegar
2 tablespoons sesame oil
3 tablespoons soy sauce
2 tablespoons cornflour
250g rice noodles
2 tablespoons sesame oil
4 spring onions, chopped
2 tablespoons sesame seeds
To prepare...

Marinate the chicken in a bowl with the soy sauce and black pepper

Cook the broccoli and cabbage for 2 minutes in boiling water, drain and set aside

Stir fry the chicken and oil in a wok/frying pan on high heat for 3 minutes, stirring continuously

Remove the chicken from the pan and set aside

Add the onion, garlic, ginger, chilli and carrot to the wok/pan and stir-fry for three minutes on a high heat

Add the chicken, broccoli and cabbage, mix well then add the vinegar, sesame oil and soy sauce and heat through, stirring continuously

Mix the cornflour with one tablespoon of water, stir into the sauce and heat until just thickened

Cook the noodles according to the packet instructions, drain and mix with the sesame oil and spring onions

Serve the chicken mix over the noodles and top with sesame seeds.
