Vegetable Heavy
Thai Red Curry
Preparation time - 10 minutes
Cooking time - 10 minutes
Serves - 4
What you'll need...
1 tablespoon olive oil
10g ginger, sliced
2 garlic cloves, chopped
6 tablespoons red curry paste
800ml coconut milk
300g king prawns
200g mange tout
300g carrots, thinly sliced
1 broccoli floret, stems removed
2 kaffir lime leaves
2 tablespoons fish sauce
small bunch Thai basil, roughly chopped
small bunch coriander leaves, roughly chopped
1 red chilli, sliced
To prepare...

Cook the ginger and garlic in the oil over a medium heat for 2 minutes

Add the curry paste and coconut milk

Bring to the boil, reduce to a simmer, stir and wait for the oil to rise to the surface

Add the prawns, mange tout, carrots, broccoli and lime leaves, and simmer for 5 minutes

Pour in the fish sauce and bring to the boil for a minute

Top with basil, coriander and chilli.
Veg with Hummus
Preparation time - 10 minutes
Cooking time - 15 minutes

What you'll need...
1 tablespoon olive oil
1 large zucchini, sliced
1 small broccoli floret, chopped
1 small cauliflower floret, chopped
2 garlic cloves, chopped
3 spring onions, chopped
Salt and pepper to season
1 cup brown rice, cooked
100g hummus
To prepare...

Cook the broccoli, cauliflower, zucchini and garlic in the oil over a medium heat for 3 minutes.

Season with salt and pepper.

Top with spring onions.

Serve over rice with hummus.
